School may have started for us in Georgia but it's still summer when it comes to food (especially in GA ). My friend served me a panzanella salad at the beginning of summer, and I have been obsessed since. The chopped veggies and bread are a nice break from lettuce based salads. Serve it with a protein and that's all you need for a summer supper. This peach and tomato version ended up being my favorite version, but there are endless flavor combo possibilities. Try greek with feta, chickpeas and dill or more Italian with red pepper and capers. I hope you enjoy this salad as much as I do!
